Cooking time: 30-45 min
1 kg spring onions, with whites sliced into 2cm pieces
2 garlic cloves, minced
2 cubes stock
freshly ground black pepper
lemon to squeeze
fresh chives to garnish
1. Saute onion whites with salt and pepper for 20-25 minutes. Add garlic and saute for another five minutes.
2. Stir in stock. Bring to boil.
3. Turn down heat, cover and simmer for ten minutes. Squeeze lemon. Add salt and pepper as needed.
Garnish with chives and serve hot. Add chopped boiled eggs if desired.
